Hi Emma, could you firstly tell WWW readers a little bit about you?<\/h1>\n

 <\/p>\n

I\u2019m a cake maker, specialising in buttercream decoration. I don\u2019t use fondant so all my cakes are covered in a smooth layer of buttercream and then decorated with piped flowers, lace, frills, embroidery stitching, even stained glass. Not many cake makers work purely with buttercream so my cakes are quite individual.<\/p>\n

What do you love and dislike about your job?<\/h1>\n

 <\/p>\n

I love piping. Flowers are particularly fun, and they\u2019re so quick they seem to emerge like magic. Filling a basket with a mixture of piped flowers is a great way to spend a couple of hours. I hate the clearing up. Every surface in my home seems to be covered in a thin layer of icing sugar, and as the buttercream can\u2019t be simply washed down the drain because it would clog it up, all the tips and bowls have to be wiped clean before they\u2019re washed up. So boring.<\/p>\n

How did you get into the wedding industry?<\/h1>\n

 <\/p>\n

I have always enjoyed making celebration cakes for friends and family, while working as a freelance business journalist, but when I switched to working with buttercream I became quite obsessed with the different techniques and decided to start a proper business. My style is quite whimsical and romantic, so it\u2019s perfect for wedding cakes.<\/p>\n

 <\/p>\n

Tell us about your typical working day.<\/h1>\n

 <\/p>\n

I run with my dogs first thing every morning and start work at about 9. Mornings are taken up with emails to and from couples and other customers, wedding fair organisers and other office work. At the beginning of the week I\u2019ll make sure I\u2019ve got all the ingredients and sundries I\u2019ll need for the week\u2019s orders, and run to the suppliers if necessary. Luckily I live ten minutes\u2019 drive from one of the best cake decorating suppliers in the country: they\u2019re well-used to me flying through the door two minutes before they close screaming about some odd shaped board or whatever.<\/p>\n

I try to schedule meeting with couples at the beginning of the week. This may involve making a little mock-up of a cake to give an accurate impression of what their finished cake will look like, or producing some sketches.<\/p>\n

I start baking on Wednesday, maybe Thursday. My buttercream remains fresh for about nine days at room temperature, but I still like to leave it as late as possible before I start piping a design. I love the blank canvas stage; when a cake has been torted (levelled and filled), crumb coated and given a smooth finish in its base colour, all the piping bags are filled and ready and ideally someone else is busy washing up.<\/p>\n

If you could choose another role in the wedding industry what would it be?<\/h1>\n

 <\/p>\n

A florist. I love flowers and watching florists work and sometimes get the chance to help them set up. I\u2019ve learned more about composition and colour from florists than other cake makers.<\/p>\n

What do you aim to achieve for your clients?<\/h1>\n

A cake that is beautiful, entirely individual and has bags of character.<\/p>\n

Vibrant, idiosyncratic, whimsical.<\/p>\n

Could you tell us some information about your packages and prices?<\/h1>\n

 <\/p>\n

Couples are often surprised that my cakes aren\u2019t more expensive, but piping is quick, much quicker than modelling details from gumpaste, which is what makes many fondant cakes so expensive. A three tier cake in three different flavours would start at about \u00a3400, Basketweave and tapestry finishes are time consuming to achieve, but if an elaborate detail is going to take a design out of a couples\u2019 budget I would always suggest mixing it up with a simple rose swirl or stencilled background and possibly focusing that special detail on the middle tier or at eye level.<\/p>\n

Do you have any tips for couples in selecting their wedding cake?<\/h1>\n

 <\/p>\n

Steer away from primary colours: always use a colour wheel to ensure your scheme has the right level of contrast, and think about the proportions of your venue. A little two tier cake is going to look lost in a lofty baronial hall. If you opt for a naked cake, make sure it will be cut and eaten within around four hours from delivery as it will dry out. If your cake is going to serve as a dessert, consider having a dummy cake made and matching sheet cakes to be portioned out by your caterer.<\/p>\n

Are you seeing any trends for the year ahead?<\/h1>\n

 <\/p>\n

Buttercream, obviously! I\u2019ve seen a huge growth of interest in the last few months. A few high-profile celebrities have had buttercream wedding cakes recently, so that helps. Ombre cakes (fading from dark to light) are still popular, particularly with a ruffled or swirled finish. Pink and turquoise shades are the most effective. And metallics. Lots of gold leaf, which looks amazing in contrast to a rustic finish, or tiny gold details.<\/p>\n

Can you give us a teaser about what you are working on now?<\/h1>\n

 <\/p>\n

I\u2019m busy making display cakes for a couple of wedding fairs in September. One is based on a Victorian sampler, with lots of cross stitch and embroidered roses. Another has copper leaf highlights.<\/p>\n

Where does the inspiration for your cakes come from?<\/h1>\n

 <\/p>\n

Usually a piece of fabric or embroidery. I follow Pinterest pinners who collect images of embellished hats, bags and textiles. Sometimes a bride will ask for a detail on her dress to be replicated, which is fun.<\/p>\n

How long does it take to make one of your cake creations?<\/h1>\n

 <\/p>\n

It depends on how complicated it is. Piping tapestry stitching on a three tier cake can take three days. It becomes quite uncomfortable too, so I have to break off every ten minutes.<\/p>\n
